Eggs Glorious Eggs!

It’s the first of December and we’re officially in the countdown to Christmas. Hooray!

While it’s tempting to break out the mulled wine and festive nibbles for breakfast, lunch and dinner, I’m going to try to reign it in and keep up the healthy eating for another couple of weeks at least!

Now I absolutely love eggs because of their complete versatility!

Eggs are brilliant for morning breakfasts as they provide you with both protein and fats that are going to keep you fuller for longer and provide you with energy!

I often make a batch of these healthy breakfast egg muffins to have on hand for those busy mornings when I know I won’t have much time but still want a healthy and delicious breakfast!

Or If I need a breakfast on the go, then these made with soft-boiled eggs are a great way to load up on protein without lots of faffing about!

But eggs are also brilliant for brunch or even lunch too!

The kids really like these Dippy Eggs with Avocado Grilled Cheese Toasties for lunch.

Gloriously runny eggs with avocado and cheese toasties are a really simple and relatively cheap way a getting loads of goodness into the kids at lunchtime or even for tea.

I love all these egg recipes, but I really wanted to create an egg dish that was a little bit different to our usual repertoire.

Luckily I’ve discovered a new recipe that’s deliciously warm and comforting on a cold day. Yet filling enough to hopefully stop me from reaching into that tin of christmas choccies by the afternoon!

How To Make My Easy Baked Eggs

This is a REALLY easy recipe! And you only need a handful of simple ingredients.

Once you have gathered all the ingredients (see the recipe card below for full details), you simply need to combine them in a bowl.

Then divide that mixture between 4 individual ramekins, crack an egg on top of each and then bake in the oven!

It really is that easy!

I am a bit of an egg fiend and can be quite particular about the way that they are cooked, but I was really chuffed with how this recipe turned out and can see myself making Baked Eggs a lot over the coming months.

Ingredient Substitutions

Meat

I used chorizo in my recipe, giving the tomatoes a bit of a spanish kick but you can of course leave it out to make a vegetarian option.

Or substitute the chorizo for some crispy bacon, ham or another type of meat.

Veggies

I added a side of raw carrots and celery for dipping into the mixture but you can use any fresh veggies you like really. Or if you wanted to skip the veggies, then some crusty bread would work wonderfully too.

Cheese

I served my baked eggs topped with a sprinkle of finely grated parmesan cheese but feel free to experiment with different cheeses.

Cheddar cheese would work just as well or maybe even a spicy mexican cheese if you like bold flavours!

I also added hot sauce to mine for a bit of extra spice!

Herbs & Spices

I have used oregano and paprika this time, but you could use some different fresh herbs and spices, depending on your taste buds.

Or to compliment different flavors depending on what meat you’ve chosen to use.

These simple baked eggs are best eaten hot straight from the oven as the egg will begin to change in texture slightly and you won’t get those delicious runny yolks if they are left to go cold or have to be reheated.

Warm and comforting, this Baked Eggs with Tomato & Chorizo recipe makes the perfect quick and easy lunch on a cold winters day

Ingredients

  • 1 can (400g) chopped tomatoes
  • 100g chorizo, chopped into bite sized pieces
  • 1 garlic clove, crushed
  • ½ tsp oregano
  • ½ tsp paprika
  • 4 medium eggs
  • To garnish:
  • Grated Parmesan
  • Parsley

Instructions

  1. Preheat the oven to 200c.
  2. In a bowl mix the chopped tomatoes, chorizo, garlic, oregano and paprika together. Divide the mixture between 4 oven proof dishes or ramekins. Crack an egg into each dish and bake in the oven for 15 minutes.
  3. Garnish with grated parmesan and parsley.
